Ingredients
- 1.5 lb potatoes, peeled and cubed
- 2 cups fresh corn kernels (or frozen, thawed)
- 1 medium onion, diced
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 pinch salt and pepper to taste
- ¼ cup fresh cilantro or parsley, chopped

Boil potatoes in salted water until fork-tender, 12–15 minutes. Drain well.

Heat olive oil in a large skillet over medium. Add onion and cook, stirring, until softened, 4 minutes.

Add garlic and cook, stirring, until fragrant, about 30 seconds.

Add corn and cook, stirring occasionally, for 3 minutes until heated through.

Add drained potatoes. Mash coarsely with a fork until creamy but still textured.
