Ingredients
- 4 cups all-purpose flour
- 2.25 teaspoons active dry yeast
- 1.5 cups warm water
- ¼ cup honey
- 3 large eggs
- ¼ cup olive oil
- 1.5 teaspoons salt
- 2 tablespoons sesame seeds

In a large bowl, dissolve the 2.25 tsp yeast and 1 tbsp honey in the 1.5 cups warm water; let sit until foamy, about 5-10 minutes.

Add the remaining honey, 2 eggs, 0.25 cup olive oil, and 1.5 tsp salt to the yeast mixture; stir to combine.

Gradually add the 4 cups flour, mixing until a soft dough forms; knead on a floured surface until smooth and elastic, about 8-10 minutes.

Place dough in a greased bowl, cover, and let rise in a warm spot until doubled in size, about 1 hour.

Punch down the dough, divide into 3 equal parts, and roll each into a long rope; braid the ropes together and tuck the ends under.

Place the braided loaf on a baking sheet, cover, and let rise again for 30 minutes; brush with the remaining beaten egg and sprinkle with the 2 tbsp sesame seeds and fresh rosemary.
