Ingredients

  • 1 can (15 oz) canned beans (mixed or kidney)
  • 1 cup corn kernels (frozen or canned)
  • 2 medium tomatoes (diced)
  • 1 small red chili pepper (minced)
  • 1 medium onion (chopped)
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt
  • ¼ cup fresh cilantro (chopped)

Instructions

    Heat oil in a large skillet over medium heat. Add onion and chili; sauté until soft, about 3 minutes.

    Add diced tomatoes and cook until they release juices, about 5 minutes.

    Stir in beans and corn. Simmer uncovered for 10 minutes, stirring occasionally.

    Season with salt. Cook until slightly thickened, about 5 more minutes.
