- 1 cup corn kernels (frozen or canned)
- 2 medium tomatoes (diced)
- 1 small red chili pepper (minced)
- 1 medium onion (chopped)
- 2 tablespoons vegetable oil
- ½ teaspoon salt
- ¼ cup fresh cilantro (chopped)
