Ingredients

  • 2 cups shredded carrots (packed)
  • ¾ cup sweetened condensed milk
  • 3 tbsp ghee
  • ¼ tsp ground cardamom
  • ⅓ cup cashews, chopped
  • ¼ cup raisins
  • ¼ cup pistachios, chopped
  • 1 tbsp powdered sugar

Instructions

    Heat ghee in a large skillet over medium. Add shredded carrots and stir constantly.

    Pour in condensed milk and cardamom. Mix until the carrots absorb liquid and darken.

    Fold in cashews and raisins. The mixture should look fudgy and hold together when pressed.

    Spread onto a parchment-lined plate. Press flat with a spatula to 0.5-inch thickness.
