Ingredients

  • 2 cups carrot, finely grated
  • ¾ cup ghee or clarified butter
  • ½ cup sweetened condensed milk
  • ½ cup chopped cashews or almonds
  • 3 tbsp milk powder (or instant vanilla pudding mix)
  • 4 whole green cardamom pods, crushed
  • 2 oz dark chocolate, chopped (optional layer)
  • 2 tbsp desiccated coconut (optional garnish)

Instructions

  1. 1

Heat ghee in a wide skillet over medium. Add grated carrot and stir constantly until it darkens and smells nutty, 6–7 minutes.

  2. 2

Stir in condensed milk, cashews, milk powder, and cardamom seeds. Cook, stirring, until the mixture thickens and pulls from the pan sides, 2–3 minutes.

  3. 3

Pour mixture onto a parchment-lined 8-inch square pan. Press flat with a wet spatula until level.

  4. 4

If using chocolate, scatter chopped pieces over the surface while the halwa is still warm. Let them soften, then spread evenly.

  5. 5

Refrigerate until set, 20–30 minutes. Cut into 12–16 bars. Garnish with coconut if desired.
