Ingredients
- 2 cups carrot, finely grated
- ¾ cup ghee or clarified butter
- ½ cup sweetened condensed milk
- ½ cup chopped cashews or almonds
- 3 tbsp milk powder (or instant vanilla pudding mix)
- 4 whole green cardamom pods, crushed
- 2 oz dark chocolate, chopped (optional layer)
- 2 tbsp desiccated coconut (optional garnish)

Heat ghee in a wide skillet over medium. Add grated carrot and stir constantly until it darkens and smells nutty, 6–7 minutes.

Stir in condensed milk, cashews, milk powder, and cardamom seeds. Cook, stirring, until the mixture thickens and pulls from the pan sides, 2–3 minutes.

Pour mixture onto a parchment-lined 8-inch square pan. Press flat with a wet spatula until level.

If using chocolate, scatter chopped pieces over the surface while the halwa is still warm. Let them soften, then spread evenly.

Refrigerate until set, 20–30 minutes. Cut into 12–16 bars. Garnish with coconut if desired.
