Ingredients

  • 1 small head (about 1 lb) green cabbage, cored and thinly shredded
  • ½ small head red cabbage, cored and thinly shredded
  • ¾ cup apple cider vinegar
  • ¼ cup water
  • 2 tbsp sugar
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper

    Slice green and red cabbage as thin as possible using a sharp knife or mandoline. Transfer to a large bowl.

    Whisk together vinegar, water, sugar, red pepper flakes, salt, and pepper in a small bowl.

    Pour dressing over cabbage and toss vigorously until cabbage is evenly coated and starts to soften.

    Let slaw sit for 10 minutes, tossing once halfway through. Taste and adjust vinegar or salt as needed.
