- 1 cup carnitas (shredded pork)
- ½ cup pineapple chunks
- 2 small corn tortillas
- ½ cup purple cabbage (shredded)
- 2 tbsp fresh cilantro
- 1 wedge lime wedges

Warm the 2 small corn tortillas in a dry skillet over medium heat until soft and pliable, about 1 minute per side.

In the same skillet, add the 1 cup carnitas and 0.5 cup pineapple chunks. Cook over medium-high until the pork is heated through and slightly crispy at the edges, about 3-4 minutes.

Divide the pork and pineapple between the tortillas. Top with 0.5 cup shredded purple cabbage and 2 tbsp cilantro.
