Carinthian Cheese Noodles

Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • ¼ cup water
  • 1 cup cottage cheese
  • 2 tbsp butter
  • 1 tsp salt

Instructions

    In a large bowl, mix 2 cups flour, 2 eggs, 1/4 cup water, and 1/2 tsp salt until a dough forms. Knead on a floured surface for 5 minutes until smooth, then cover with a towel.

    In a separate bowl, combine 1 cup cottage cheese and 1/2 tsp salt. Mix well.

    Roll the dough out thinly on a floured surface, about 1/8 inch thick. Cut into 3-inch squares.

    Place a spoonful of the cheese mixture in the center of each square. Fold over to form a triangle and press edges firmly to seal.

    Bring a large pot of salted water to a boil. Drop in the noodles and cook for 5-7 minutes until they float and are tender. Drain and toss with 2 tbsp butter until melted.

    Serve hot, optionally topped with extra melted butter or chives.
