Ingredients

  • ¾ cup chickpea flour (besan)
  • ¼ cup ghee or clarified butter
  • ½ cup granulated sugar
  • 4 whole cardamom pods
  • 1.5 cups neutral oil (for frying)

Instructions

    Crush cardamom pods and extract the seeds. Grind seeds to a fine powder; mix with sugar and set aside.

    Heat ghee in a small saucepan over medium heat. Add chickpea flour and stir constantly until golden brown and fragrant, 6–8 minutes. Let cool slightly.

    Heat oil in a deep skillet or wok to 350°F. Transfer cooled batter to a boondi ladle or squeeze bottle with small holes.

    Squeeze batter through ladle directly into hot oil in small pearls. Fry until golden and crispy, stirring gently, 2–3 minutes.

    Drain fried boondi on paper towels for 1 minute. While still warm, toss with cardamom sugar until evenly coated.

    Serve warm or at room temperature. Store in an airtight container for up to 3 days.
