Ingredients

  • 4 pieces (about 6 oz each) pork chops (1-inch thick, bone-in or boneless)
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic cloves, minced
  • 1 whole lime (for juice and charring)
  • 2 tbsp neutral oil

Instructions

    Mix fish sauce, brown sugar, and minced garlic in a small bowl until sugar dissolves.

    Pat pork chops dry. Coat both sides lightly with salt and black pepper.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork chops 2 minutes per side without moving. They should be golden brown with char.

    Pour the fish sauce mixture over the chops and swirl the pan for 90 seconds until caramelized and sticky.

    Cut the lime in half and char it cut-side down in the skillet for 30 seconds. Squeeze over the chops and serve immediately.
