- 4 pieces (about 6 oz each) pork chops (1-inch thick, bone-in or boneless)
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 4 cloves garlic cloves, minced
- 1 whole lime (for juice and charring)
- 2 tbsp neutral oil

Mix fish sauce, brown sugar, and minced garlic in a small bowl until sugar dissolves.

Pat pork chops dry. Coat both sides lightly with salt and black pepper.
