Ingredients
- 4 oz espresso
- 8 oz whole milk
- 1 tsp sugar

Pull 2 oz espresso into each of two cups (or 4 oz into a single pitcher if making both at once).

Steam 4 oz milk until a thermometer reads 150–155°F, tilting the pitcher to create a whirlpool.

For the cappuccino: pour steamed milk into the first cup, holding back foam with a spoon; top with 0.5 inch foam.

Steam remaining 4 oz milk to 150–155°F with minimal foam (just a thin layer).

For the cortado: pour equal parts espresso and steamed milk into the second cup; stir gently.

Serve both immediately. Add sugar to taste if desired.
