- 2 medium, cubed potatoes
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

Stir in the 2 sliced carrots and 2 cubed potatoes. Cook for 3-4 minutes, stirring occasionally, until they start to brown slightly.

Add the 1 tsp smoked paprika and stir for 30 seconds until fragrant.
- 4
Pour in the 4 cups vegetable broth. Bring to a boil, then reduce heat to low and simmer until vegetables are tender, about 20 minutes.
- 5
Season with the 1 tsp salt and 0.5 tsp black pepper. Taste and adjust if needed. Serve hot, garnished with fresh herbs if you like.
- 6
For a smokier flavor, add a dash of liquid smoke or a pinch of chipotle powder along with the paprika.
