Ingredients

  • 2 tbsp olive oil
  • 1 medium, diced onion
  • 2 medium, sliced carrots
  • 2 medium, cubed potatoes
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

    Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

    Stir in the 2 sliced carrots and 2 cubed potatoes. Cook for 3-4 minutes, stirring occasionally, until they start to brown slightly.

    Add the 1 tsp smoked paprika and stir for 30 seconds until fragrant.

    Pour in the 4 cups vegetable broth. Bring to a boil, then reduce heat to low and simmer until vegetables are tender, about 20 minutes.
