Cajun Smoked Duck & Crispy Egg Pasta

Ingredients
- 10 oz smoked duck breast
- 6 oz spaghetti
- 1.5 tsp cajun seasoning
- 2 tbsp butter
- 2 whole large eggs
- ½ whole lemon
- 2 tbsp scallions, chopped

Boil salted water in a large pot. Add spaghetti and cook until al dente, about 9 minutes.

While pasta cooks, pat duck dry and score the skin crosswise. Season both sides with cajun seasoning.

Heat a skillet over medium-high. Sear duck skin-side down until crispy, 3 minutes, then flip once and cook 2 minutes more. Transfer to a cutting board.

In the same skillet, melt 1 tbsp butter. Crack both eggs in, cook until whites set but yolks jiggle, 2–3 minutes.

Drain pasta, return to pot, toss with remaining 1 tbsp butter and a squeeze of lemon. Divide between plates.

Slice duck breast. Top pasta with duck, then a fried egg. Scatter scallions and serve immediately.
