20-Min Cajun Shrimp & Potato Skillet

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb baby potatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 4 tbsp butter
  • 2 tbsp Cajun seasoning
  • 1 whole lemon

Instructions

    Toss potatoes with 1 tbsp butter, 1 tbsp Cajun seasoning, and a pinch of salt on a sheet pan.

    Roast potatoes at 425°F until edges brown, about 12 minutes.

    Push potatoes to the side, scatter shrimp and corn on the pan, then dot with remaining 3 tbsp butter and 1 tbsp Cajun seasoning.

    Return to oven for 4 minutes until shrimp edges turn pink and curl.

    Squeeze lemon over the whole pan and toss gently until butter coats everything.

    Serve hot, drizzling pan juices over the top.
