Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ears corn on the cob, cut into 2-inch pieces
  • 8 oz baby potatoes, halved
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 2 tsp cajun seasoning

Instructions

  1. 1

Tear off two large sheets of heavy-duty foil. Divide potatoes, corn, and shrimp between them, arranging in a single layer.

  2. 2

Top each packet with 2 tbsp butter, 2 cloves garlic, 1 tsp cajun seasoning, and a pinch of salt and pepper.

  3. 3

Fold foil tightly, crimp edges, and place seam-side up on a sheet pan. Roast at 425°F for 15 minutes until shrimp is opaque.

  4. 4

Carefully open foil (steam is hot). Drizzle any pan juices over the shrimp and corn, then serve in the foil.
