Ingredients

  • ¾ lb large shrimp, peeled and deveined
  • ½ lb smoked sausage, sliced into rounds
  • ½ lb red potatoes, halved
  • 2 ears corn on the cob, cut into 2-inch pieces
  • 4 tbsp butter
  • 3 cloves garlic, minced

Instructions

    Preheat oven to 400°F. Tear off two large sheets of foil, each about 12 inches long.

    Divide potatoes between the two foil sheets. Top each with half the sausage, shrimp, and corn.

    Sprinkle garlic evenly over both packets. Top each with 2 tbsp butter, 1 tsp Cajun seasoning, and a pinch of salt and pepper.

    Fold foil edges tightly to seal each packet. Place on a baking sheet and bake for 15 minutes.

    Carefully open packets—steam will be hot. Slide contents into shallow bowls and serve with lemon wedges.
