Ingredients

  • ¾ lb salmon fillet
  • 1.5 tsp cajun seasoning
  • 2 tbsp olive oil
  • 1 cup white rice
  • ½ lb asparagus

Instructions

    Bring 2 cups salted water to a boil; add rice and simmer covered until tender, ~18 minutes.

    Pat salmon dry, rub both sides with cajun seasoning, then coat with 1 tbsp oil.

    Heat remaining oil in a skillet over medium-high until shimmering, ~90 seconds.

    Sear salmon skin-side up for 3 minutes without moving until skin crisps, then flip once and cook 2 minutes more.

    Toss asparagus with salt and pepper on the skillet's empty side; cook uncovered 4 minutes until tender-crisp.
