  • 1 lb andouille sausage
  • 1 large bell pepper, red or yellow
  • 1 medium yellow onion
  • 3 cloves garlic cloves, minced
  • ½ cup chicken broth
  • 1.5 teaspoon cajun seasoning blend
  • ½ teaspoon hot sauce (Louisiana-style)
  • 2 sprigs fresh thyme

    Slice andouille sausage diagonally into 0.5-inch-thick pieces.

    Dice bell pepper into 1-inch chunks.

    Dice onion into 1-inch pieces.

    Mince garlic and set aside.

    Heat cast iron skillet over medium-high heat for 2 minutes.

    Add sausage slices and cook without stirring for 3 minutes.

    Flip sausage pieces and cook another 2 minutes until edges caramelize.
