Ingredients

  • 2 shots (1 oz each) espresso
  • 10 oz whole milk
  • ½ tsp sugar
  • 0.05 pinch salt

Instructions

  1. 1

Pull two espresso shots (2 oz total) into a warm cup or mug.

  2. 2

Pour milk into the steam pitcher. Insert the steam wand just below the surface and open the valve slowly.

  3. 3

Steam the milk, keeping the wand tip at the surface to create a whirlpool, until it reaches 150–155°F (about 60 seconds).

  4. 4

Remove the pitcher and let the foam settle for 10 seconds, then gently tap the pitcher on the counter to break large bubbles.

  5. 5

Pour the steamed milk into the espresso, holding back the microfoam with a spoon, filling to about 3/4 cup.

  6. 6

Top with a thin layer of microfoam (about 1/4 inch). Serve immediately.

Tools you’ll need

  • espresso machine with steam wand
  • milk thermometer or instant-read thermometer
  • metal milk pitcher (10-12 oz)
  • warm ceramic or glass cup
  • spoon (for holding back foam)
