Buttery Soft-Egg Ramen

Ingredients
- 2 packages instant ramen noodles
- 2 whole egg
- 2 tbsp butter
- 2 tbsp scallion, sliced

Bring a pot of salted water to a boil, then gently lower the eggs in for 6 minutes until soft-boiled.

Remove eggs with a slotted spoon and set aside to cool, then boil the ramen noodles in the same water until tender, ~3 minutes.

Reserve 1 cup pasta water, then drain noodles and return them to the pot.

Stir the butter into the hot noodles until melted and glossy, then add the ramen seasoning packet and 1/2 cup pasta water.

Divide noodles between bowls, add remaining broth, then top each with a halved soft-boiled egg and scallion.
