Ingredients

  • 8 oz burrata
  • ½ cup walnuts
  • 2 cups mixed greens
  • ¼ cup parmesan
  • 2 tbsp olive oil
  • ½ medium lemon
  • ¼ tsp salt
  • ¼ tsp black pepper

    Preheat oven to 350°F. Spread 1/4 cup parmesan in a thin circle on a parchment-lined baking sheet. Bake until golden and lacy, about 6-8 minutes. Let cool to crisp.

    Toast 1/2 cup walnuts in a dry skillet over medium heat until fragrant and lightly browned, about 3-4 minutes. Chop roughly and set aside.

    In a large bowl, whisk 2 tbsp olive oil, juice of 1/2 lemon, 1/4 tsp salt, and 1/4 tsp black pepper. Add 2 cups mixed greens and toss to coat.

    Place 8 oz burrata on a serving plate. Break it open slightly to reveal the creamy center.

    Top burrata with the dressed greens and sprinkle with the toasted walnuts. Break the crispy parmesan lace into shards and arrange on top. Serve immediately.
