Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • ¾ cup raisins

Instructions

  1. 1

Preheat oven to 350°F. Grease a 9-inch bundt pan with butter or nonstick spray.

  2. 2

In a medium bowl, whisk together 2 cups flour and 2 teaspoons baking powder. Set aside.

  3. 3

In a large bowl, beat 1/2 cup softened butter and 3/4 cup sugar until light and fluffy, about 3 minutes. Add 2 eggs one at a time, beating well after each.

  4. 4

Stir in the flour mixture until just combined. Fold in 3/4 cup raisins and 1 tablespoon orange zest (if you have an orange).

  5. 5

Pour batter into the prepared pan. Bake until a toothpick inserted comes out clean, about 35-40 minutes. Cool in pan 10 minutes, then invert onto a rack to cool completely.
