Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • ¾ cup milk
  • 1.5 cups mixed berries and figs, for topping

Instructions

    Preheat oven to 350°F. Grease a 10-cup bundt pan with butter or nonstick spray.

    In a medium bowl, whisk together the 2 cups flour, 2 tsp baking powder, and 1/2 tsp salt.

    In a large bowl, beat the 1/2 cup softened butter and 1 cup sugar until light and fluffy, about 3 minutes.

    Add the 2 eggs one at a time, beating well after each. Stir in the 3/4 cup milk until just combined.

    Gradually add the flour mixture to the wet ingredients, mixing until just moistened; do not overmix.

    Pour batter into the prepared pan and bake until a toothpick inserted comes out clean, 35-40 minutes.

    Cool in the pan for 10 minutes, then invert onto a plate. Top with the 1.5 cups berries and figs and dust with powdered sugar.
