Ingredients

  • 1 lb boneless chicken thighs
  • 3 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 packages instant ramen noodles
  • 2 sticks mozzarella cheese sticks

Instructions

    Cut 1 lb chicken thighs into bite-size pieces. In a bowl, mix 3 tbsp gochujang, 2 tbsp soy sauce, and 1 tbsp honey. Toss chicken in the sauce and set aside.

    Cook 2 packages instant ramen noodles according to package directions, then drain and set aside. Reserve 1/4 cup of the noodle water.

    Heat a large skillet over medium-high. Add the sauced chicken and cook, stirring, until browned and cooked through, about 8 minutes. The sauce should cling and caramelize slightly.

    Add the cooked noodles and reserved noodle water to the skillet. Toss everything together over medium heat until the noodles are coated and hot, about 2 minutes.

    Slice 2 mozzarella cheese sticks and arrange on top of the noodles. Cover the skillet for 1 minute to melt the cheese, then serve with sliced tomatoes and a sprinkle of crispy fried onions if you have them.
