Ingredients

  • 2 packages ramen noodles (instant, without seasoning packet)
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or sugar
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (e.g., carrots, cabbage, scallions)
  • 2 tablespoons roasted seaweed flakes (gim)

Instructions

  1. 1

Cook ramen noodles in boiling water for 2 minutes less than package directs. Drain and rinse with cold water to stop cooking.

  2. 2

In a small bowl, mix gochujang, gochugaru, soy sauce, honey, and 2 tablespoons of water to make a sauce.

  3. 3

Heat vegetable oil in a large skillet or wok over medium-high heat. Add mixed vegetables and stir-fry for 2-3 minutes until crisp-tender.

  4. 4

Add the drained noodles and the sauce to the skillet. Toss everything together over medium heat for 2-3 minutes until noodles are well coated and heated through.

  5. 5

Remove from heat and sprinkle with roasted seaweed flakes. Serve immediately.
