Ingredients
- 1 head (about 4 cups) cauliflower florets
- ¾ cup buffalo sauce
- ½ cup flour
- ½ cup water
- 8 count corn tortillas
- ½ cup ranch dressing
- 2 cups lettuce or coleslaw mix
- 1 whole lime

Preheat oven to 425°F. Pat cauliflower florets dry with paper towels.

Mix flour and water in a bowl until smooth, no lumps visible.

Dip cauliflower florets in batter, then spread on a rimmed sheet pan.
