Ingredients

  • 1 head (about 4 cups) cauliflower florets
  • ¾ cup buffalo sauce
  • ½ cup flour
  • ½ cup water
  • 8 count corn tortillas
  • ½ cup ranch dressing
  • 2 cups lettuce or coleslaw mix
  • 1 whole lime

Instructions

    Preheat oven to 425°F. Pat cauliflower florets dry with paper towels.

    Mix flour and water in a bowl until smooth, no lumps visible.

    Dip cauliflower florets in batter, then spread on a rimmed sheet pan.

    Roast for 15 minutes until florets are golden and edges crisp.

    Remove from oven. Toss hot cauliflower with buffalo sauce until coated.

    Warm tortillas in a dry skillet over medium heat, 30 seconds per side.

    Drizzle ranch on each tortilla. Add lettuce, then buffalo cauliflower.

    Squeeze fresh lime juice over the top. Serve immediately.
