Ingredients
- 8 oz firm tofu
- ½ cup dried black fungus
- 1 cup green beans
- 1 bell pepper
- 1 carrot
- 2 tbsp soy sauce

Soak the 1/2 cup dried black fungus in warm water until soft, about 10 minutes. Drain and slice into bite-sized pieces.

Press the 8 oz tofu dry, then cut into 1-inch cubes. Heat 1 tbsp oil in a large skillet over medium-high heat and cook tofu until golden on all sides, about 6 minutes. Remove and set aside.

In the same skillet, add 1 tbsp oil and stir-fry the 1 cup green beans, 1 sliced bell pepper, and 1 sliced carrot for 4 minutes until crisp-tender.

Add the fungus and tofu back to the skillet. Pour in 2 tbsp soy sauce and 2 tbsp water, stirring to coat. Cook for 2 minutes until the sauce thickens slightly and everything is heated through.
