Ingredients

- 2 large egg
- 1.5 cups milk
- ½ teaspoon salt
- 2 tablespoons butter
- 2 tablespoons powdered sugar

In a blender, combine 1 cup buckwheat flour, 2 eggs, 1.5 cups milk, and 0.5 tsp salt. Blend until smooth, about 30 seconds. The batter should be thin, like heavy cream.

Heat a 10-inch nonstick skillet over medium heat and melt 1 tbsp butter. Pour in 1/4 cup of batter, swirling to coat the bottom evenly.

Cook until the edges lift and the bottom is golden, about 2 minutes. Flip and cook the other side for 1 minute more. Repeat with remaining batter, adding more butter as needed.
