Ingredients
- 12 oz penne pasta
- 5 cups broccoli florets
- 1.5 cups sharp cheddar cheese, shredded
- 3 tbsp butter
- 3 clove garlic cloves, minced
- ½ cup heavy cream
- 1 pinch salt and black pepper to taste
Instructions
- 1
Boil salted water in a large pot. Add penne and cook until al dente, ~10 minutes. Reserve 1 cup pasta water, then drain.
- 2
Meanwhile, add broccoli to the pasta water in the last 3 minutes of cooking to soften slightly.
- 3
Melt butter in the same pot over medium-low. Add minced garlic and cook until fragrant, ~90 seconds.
- 4
Pour in cream and whisk until smooth. Remove from heat.
- 5
Add cheddar and stir until melted and silky, ~1 minute. Add pasta and broccoli back to pot.
- 6
Stir gently. If sauce is too thick, add reserved pasta water 2 tbsp at a time. Season with salt and pepper.
