British Mince Pies

Ingredients

  • 1.5 cups all-purpose flour
  • 6 tablespoons cold butter, cubed
  • 3 tablespoons cold water
  • ¾ cup dried mixed fruit (raisins, currants, and dried apple)
  • ½ medium apple Granny Smith apple, peeled and finely diced
  • ½ teaspoon ground cinnamon and nutmeg, mixed

Instructions

    Pour 1.5 cups flour and 0.25 teaspoon salt into a medium bowl and stir together with a wooden spoon.

    Drop the 6 tablespoons cold butter cubes into the flour, then use your fingertips to rub the butter into the flour, pinching and crumbling, until the mixture looks like wet sand with no large butter chunks remaining.

    Pour in 3 tablespoons cold water and stir with a wooden spoon until the dough just comes together in a shaggy ball; do not overmix.

    In a small bowl, combine 0.75 cup dried mixed fruit, the diced apple half, 0.5 teaspoon cinnamon and nutmeg blend, and a pinch of salt; stir until the fruit and apple are evenly coated with spice.

    Set the oven to 400°F and wait for the indicator light or beep, about 10 minutes.

    Dust a cutting board lightly with flour, place the dough on it, and gently flatten it with your hands into a thickness the width of a pencil.

    Using a 3-inch round cookie cutter or cup, cut circles from the dough, pressing straight down; re-roll scraps and cut again until all dough is used — you should have about 24 rounds.

    Place 12 dough rounds onto two baking sheets, spacing them 1 inch apart.

    Spoon 1 teaspoon of the fruit filling onto the center of each dough round on the baking sheets.

    Take a second dough round, place it directly on top of the filling, and press the edges together with your fingertips until sealed; repeat for all 12 pies.

    Use the tines of a fork to prick the top of each pie three times, creating small air holes so steam can escape during baking.

    Slide the baking sheets into the preheated 400°F oven and bake until the pastry is light golden brown, about 12 to 14 minutes.

    Remove the pies from the oven and let them cool on the baking sheet for 2 minutes before serving warm or at room temperature.
