Ingredients

  • 2 large eggs
  • 2 slice bread slices
  • 1 cup canned beans
  • ½ cup shredded cheese
  • 2 tbsp butter
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

    In a small saucepan over medium heat, add the 1 cup beans and cook until hot and slightly thickened, about 5 minutes, stirring occasionally.

    Meanwhile, melt 1 tbsp butter in a nonstick skillet over medium heat. Crack the 2 eggs into the skillet and cook until whites are set and edges are crispy, about 3 minutes for sunny-side-up.

    Toast the 2 bread slices until golden and crisp, about 2 minutes. Spread the remaining 1 tbsp butter on the hot toast.

    Sprinkle the 0.5 cup shredded cheese over the hot beans and let it melt, about 1 minute.

    Place the toast on a plate, top with the fried eggs, and season with the 0.25 tsp salt and 0.25 tsp black pepper. Serve the cheesy beans alongside.
