Ingredients
- 3 cups frozen hash browns
- 4 slices bacon
- 4 links breakfast sausage links
- 4 large eggs
- ½ medium onion
- 2 tbsp vegetable oil
- ½ tsp salt
- ¼ tsp black pepper

Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add 3 cups frozen hash browns and 1/2 diced onion. Cook, stirring occasionally, until golden and crispy, about 10 minutes.

While hash browns cook, place 4 bacon slices in another skillet over medium. Cook until crisp, about 6 minutes. Remove bacon, crumble, and set aside. Reserve 1 tbsp bacon fat.

In the same skillet with bacon fat, cook 4 sausage links over medium, turning, until browned and cooked through, about 8 minutes. Slice into rounds.

Add the sliced sausage and crumbled bacon to the hash browns. Season with 1/2 tsp salt and 1/4 tsp black pepper. Stir to combine and cook for 2 minutes until heated through.

Make 4 wells in the hash mixture. Crack 1 egg into each well. Cover and cook until whites are set but yolks are still runny, about 4 minutes. Serve hot.
