Ingredients
- 2 pieces pork cutlets
- ½ cup all-purpose flour
- 2 large eggs
- 1.5 cups panko breadcrumbs
- ½ cup vegetable oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cups green leaf lettuce

Pound the 2 pork cutlets to 1/2 inch thickness. Season both sides with salt and pepper.

Set up three shallow dishes: 0.5 cup flour, 2 beaten eggs, and 1.5 cups panko breadcrumbs.

Dredge each cutlet in flour, then egg, then breadcrumbs, pressing firmly to coat. Set aside on a plate.

Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes.

Fry the cutlets in the hot oil until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
