- 3 tbsp oil
- 1 tsp salt
- 1 cup shredded mozzarella cheese
- 2 cups oil for frying

In a bowl, mix 2 cups flour, 1 tsp salt, 3 tbsp oil, and 0.75 cup water until a dough forms. Knead for 2 minutes until smooth, then let rest for 5 minutes.

Divide dough into 4 balls. Roll each ball into a thin 8-inch circle on a floured surface, about 1/8-inch thick.

Place 1/4 cup mozzarella on one half of each circle, leaving a 1/2-inch border. Fold the other half over and press edges with a fork to seal.

Heat 2 cups oil in a deep skillet over medium-high until shimmering, about 350°F. Fry pastries one at a time for 2-3 minutes per side, until golden brown and puffed.

Drain on paper towels and serve hot. Add oregano or chili flakes to the filling if you like.
