Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb yam, peeled and cubed
- 1 cup coconut milk
- 2 medium tomatoes, diced
- 1 medium onion, chopped
- ¼ cup cilantro, chopped

In a pot, cover the 1 lb yam with water and boil until fork-tender, about 10 minutes. Drain and mash with 1 cup coconut milk until smooth; set aside.

In a skillet, sauté the 1 chopped onion and 2 diced tomatoes over medium heat until soft, about 5 minutes.

Add the 1 lb shrimp to the skillet and cook until pink and opaque, about 3 minutes.

Stir the yam-coconut puree into the skillet and simmer until thickened, about 2 minutes. Season with salt and pepper.
