Ingredients

  • 1 lb beef sirloin or strip steak, cut into 1.5-inch cubes
  • ½ cup fresh parsley and cilantro, finely chopped
  • 4 cloves garlic, minced
  • 3 tbsp red wine vinegar
  • 1.5 tsp coarse sea salt
  • 1 whole lemon, halved

Instructions

    Pat beef cubes dry with paper towels. Thread onto skewers, leaving small gaps between pieces.

    Mix parsley, cilantro, garlic, vinegar, and sea salt in a small bowl until paste-like.

    Coat skewers heavily with the herb paste on all sides, pressing gently so it adheres.

    Heat oil in a heavy skillet over medium-high heat until smoking, about 2 minutes.

    Sear skewers 90 seconds per side without moving. Exterior should be deeply browned, center rare to medium-rare.
