Ingredients

  • 2 lb pork ribs
  • 2 medium orange
  • 1 medium onion
  • 3 cloves garlic
  • 1 cup chicken broth
  • 1.5 lb potatoes
  • 2 tbsp butter
  • 2 tbsp parsley

Instructions

    Season the 2 lb pork ribs with salt and pepper. Heat 1 tbsp olive oil in a large pot over medium-high and brown the ribs on all sides, about 6 minutes total. Remove and set aside.

    In the same pot, add 1 sliced onion and 3 minced garlic cloves. Cook over medium until soft and golden, about 5 minutes.

    Add 1 cup chicken broth and the juice of 1 orange, scraping up any browned bits. Return the ribs to the pot, cover, and simmer over low heat until the meat is tender, about 30 minutes.

    Meanwhile, peel and chop the 1.5 lb potatoes into chunks. Boil in salted water until fork-tender, about 15 minutes. Drain and mash with 2 tbsp butter and salt to taste.

    Once the ribs are tender, remove them and keep warm. Boil the sauce over medium-high until slightly thickened, about 5 minutes. Stir in the zest of 1 orange and 2 tbsp chopped parsley.

    Serve the ribs with the orange sauce spooned over, alongside the mashed potatoes and garnished with orange slices.
