Ingredients

  • 1.5 lb pork belly, skin-on
  • ½ whole yellow onion, halved
  • 2 cups steamed white rice
  • 8 leaves lettuce leaves (butter or green leaf)
  • 8 leaves perilla leaves (kkaennip)
  • ½ cup gochujang-sesame dipping sauce (gochujang, sesame oil, minced garlic, soy sauce mixed)

Instructions

  1. 1

Place pork belly and onion in a pot, cover with cold water, and bring to a boil over high heat.

  2. 2

Reduce heat to medium and simmer until the meat is very tender and a fork pierces easily, about 12 minutes.

  3. 3

Remove pork from water, let it cool for 2 minutes, then slice against the grain into 1/4-inch-thick pieces.

  4. 4

Arrange pork, rice, lettuce, perilla, and dipping sauce on a platter or board.

  5. 5
