Boerewors with Caramelized Onions

Ingredients
- 4 links boerewors sausages (about 1.5 lbs)
- 2 large yellow onions
- ½ tsp ground coriander
- ½ tsp smoked paprika
- 2 sprigs fresh thyme (or dried)
- 1 tbsp apple cider vinegar
- 1 tsp brown sugar

Slice onions into thin half-moons. Heat oil in a large skillet over medium-high until it shimmers.

Add onions with a pinch of salt. Stir occasionally until golden and caramelized, about 8 minutes.

Push onions to the side. Nestle sausages into the pan, sear 2 minutes per side without moving them.

Sprinkle coriander, paprika, and thyme over the sausages. Cook 3 minutes until edges look deeply browned.
