Boerewors with Caramelized Onions

Ingredients

  • 4 links boerewors sausages (about 1.5 lbs)
  • 2 large yellow onions
  • ½ tsp ground coriander
  • ½ tsp smoked paprika
  • 2 sprigs fresh thyme (or dried)
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar

Instructions

    Slice onions into thin half-moons. Heat oil in a large skillet over medium-high until it shimmers.

    Add onions with a pinch of salt. Stir occasionally until golden and caramelized, about 8 minutes.

    Push onions to the side. Nestle sausages into the pan, sear 2 minutes per side without moving them.

    Sprinkle coriander, paprika, and thyme over the sausages. Cook 3 minutes until edges look deeply browned.

    Drizzle vinegar and brown sugar over everything. Toss to coat, then remove from heat.

    Serve sausages over caramelized onions with pan juices spooned on top.
