Ingredients
- 4 links bockwurst sausages
- 1.5 lb potatoes
- 1 large tomato
- ½ medium cucumber
- ½ medium yellow onion
- 3 tbsp mayonnaise
- 1 tbsp white vinegar
- 2 tbsp whole-grain mustard

Place the 1.5 lb potatoes in a pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 20 minutes.

While potatoes cook, slice the 1 large tomato and 0.5 cucumber into thin rounds. Set aside.

Drain potatoes, let cool slightly, then peel and slice into 1/4-inch rounds. In a bowl, whisk 3 tbsp mayonnaise, 1 tbsp vinegar, and 1 tbsp mustard; toss with potatoes and 0.5 finely chopped onion. Season with salt and pepper.

In a skillet over medium heat, add the 4 bockwurst sausages with 2 tbsp water. Cover and cook until heated through and lightly browned, about 8 minutes, turning once.
