Ingredients
- 1 cup sushi rice
- 2 sheets nori sheets
- 2 tbsp black tobiko
- 1 avocado
- 4 oz sushi-grade tuna
- 1 serving lemon wedges, pickled ginger, and wasabi for serving

Cook 1 cup sushi rice according to package directions, then let cool slightly. Season with a pinch of salt and a splash of rice vinegar if you have it.

Slice 1 avocado and 4 oz tuna into thin strips. Lay 1 nori sheet on a bamboo mat or clean surface, shiny side down.

Spread half the rice evenly over the nori, leaving a 1 inch strip at the top. Sprinkle 1 tbsp black tobiko over the rice.

Arrange half the avocado and tuna in a line across the center. Roll tightly, using the mat to press firmly, then seal the edge with a little water.

Repeat with remaining ingredients. Slice each roll into 6 pieces with a sharp knife. Serve with lemon wedges, pickled ginger, and wasabi.
