Ingredients

  • 1.5 cups basmati rice
  • 1 lb chicken thighs (or mixed vegetables)
  • ½ cup plain yogurt
  • 2 tbsp biryani spice blend (or garam masala)
  • 1 large onion
  • 4 cloves garlic
  • ½ cup fresh cilantro
  • 1.5 tsp salt

Instructions

  1. 1

Rinse rice until water runs clear, then soak in cold water for 20 minutes. Drain.

  2. 2

In a bowl, mix chicken (or vegetables) with yogurt, spice blend, minced garlic, and 1 tsp salt. Marinate 15 minutes.

  3. 3

Thinly slice onion and fry in oil over medium-high until golden and crispy, about 8 minutes. Set aside.

  4. 4

In a large pot, layer half the rice, then the marinated mixture, then remaining rice. Pour 2.5 cups water and 0.5 tsp salt.

  5. 5

Bring to a boil, then reduce heat to low, cover tightly, and cook 20 minutes until rice is tender and liquid absorbed.

  6. 6

Let rest 5 minutes, then fluff gently with a fork. Top with crispy onions and chopped cilantro.

  7. 7

Optional: add a pinch of saffron soaked in warm milk over the top before covering for extra color.
