Ingredients
- 1.5 cups basmati rice
- 1 lb chicken thighs (or mixed vegetables)
- ½ cup plain yogurt
- 2 tbsp biryani spice blend (or garam masala)
- 1 large onion
- 4 cloves garlic
- ½ cup fresh cilantro
- 1.5 tsp salt

Rinse rice until water runs clear, then soak in cold water for 20 minutes. Drain.

In a bowl, mix chicken (or vegetables) with yogurt, spice blend, minced garlic, and 1 tsp salt. Marinate 15 minutes.

Thinly slice onion and fry in oil over medium-high until golden and crispy, about 8 minutes. Set aside.

In a large pot, layer half the rice, then the marinated mixture, then remaining rice. Pour 2.5 cups water and 0.5 tsp salt.

Bring to a boil, then reduce heat to low, cover tightly, and cook 20 minutes until rice is tender and liquid absorbed.
