Ingredients
- 30 g dried fish maw
- 500 ml chicken broth
- 1 large egg yolk
- 2 slices ginger
- ½ tsp salt
- ¼ tsp white pepper

Soak the 30g dried fish maw in warm water for 10 minutes until soft, then drain and cut into bite-sized pieces.

In a pot, bring the 500ml chicken broth and 2 ginger slices to a boil over high heat, then reduce to medium.

Add the fish maw and simmer for 5 minutes until tender and the broth is fragrant.

Season with 0.5 tsp salt and 0.25 tsp white pepper, then remove from heat.

Ladle the soup into a bowl and gently place the 1 egg yolk in the center. Serve hot, stirring the yolk into the broth before eating.
