Ingredients

  • 2 scoops vanilla ice cream
  • 1 cup mixed berries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 4 leaves fresh mint leaves
  • 1 tsp powdered sugar

Instructions

    In a small saucepan, combine the 1 cup mixed berries, 2 tbsp sugar, and 1 tsp lemon juice. Cook over medium heat, stirring occasionally, until the berries soften and release their juices, about 5 minutes.

    Remove the berry sauce from heat and let it cool slightly for 2 minutes. If you prefer a smooth sauce, mash the berries with a fork.

    Place the 2 scoops of vanilla ice cream in a serving bowl. Spoon the warm berry sauce over the top.
