Panna Cotta with Strawberry Sauce

Ingredients

  • 2 cups heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 1 cup strawberries
  • 4 pieces biscuits

    In a small bowl, sprinkle 1 tbsp gelatin over 2 tbsp cold water. Let stand for 5 minutes until spongy.

    In a saucepan, heat 2 cups heavy cream and 1/4 cup sugar over medium, stirring, until sugar dissolves and mixture is hot but not boiling, about 3-4 minutes.

    Remove from heat, stir in 1 tsp vanilla and the softened gelatin until completely dissolved. Pour into 4 ramekins or glasses. Refrigerate until set, at least 4 hours.

    Meanwhile, blend 1 cup strawberries with 1 tbsp sugar (if desired) until smooth. Strain if you prefer a seedless sauce.

    To serve, spoon strawberry sauce over each panna cotta and serve with a biscuit on the side.
