Ingredients

  • ½ medium raw beetroot, peeled and chopped
  • 8 oz whole milk, divided
  • 1 tbsp honey or maple syrup
  • ¼ tsp vanilla extract

Instructions

    Pour 6 oz milk into a mug and microwave 90 seconds until steaming — do not boil.

    Grate the raw beetroot directly into the hot milk, pressing to release juice. Stir for 30 seconds until the milk turns bright pink.

    Strain through a fine-mesh sieve into a clean mug, pressing the pulp to extract all liquid. Discard solids.

    Whisk remaining 2 oz cold milk with honey and vanilla in a small bowl for 60 seconds until foamy and airy.
