Ingredients
- 3 medium beets
- 4 cups beef broth
- 1 cup, diced cooked ham
- 1 medium, chopped onion
- 2 cloves, minced garlic
- 1 small, sliced jalapeño

Peel and dice the 3 beets into 1/2-inch cubes. In a large pot, heat 1 tbsp olive oil over medium heat and sauté the 1 chopped onion until soft, about 5 minutes.
