Ingredients

  • 4 cups beef stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tsp dashi powder
  • ½ lb beef sirloin or ribeye
  • 1 tbsp soy sauce
  • ½ tbsp mirin
  • 1 tbsp vegetable oil
  • 10 oz udon noodles, fresh or frozen
  • 2 stalks green onions, sliced
  • ¼ sheet nori, shredded
  • ½ tsp sesame seeds
  • ¼ oz bonito flakes

Instructions

    Slice beef thinly against the grain. Combine soy sauce and mirin in a bowl.

    Heat oil in a skillet over medium-high heat. Sear beef until browned, about 1-2 minutes per side. Toss with soy-mirin mixture and set aside.

    Heat beef stock in a pot over medium heat. Add dashi powder, soy sauce, mirin, and sake. Stir until combined.

    Simmer broth for 5 minutes to let flavors meld.

    Cook udon noodles according to package directions. Drain and divide between two bowls.

    Ladle hot broth over noodles. Top with sliced beef and its juices.

    Garnish with green onions, nori, sesame seeds, and bonito flakes. Serve immediately.
