Ingredients
- 4 cups beef stock
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sake
- 1 tsp dashi powder
- ½ lb beef sirloin or ribeye
- 1 tbsp soy sauce
- ½ tbsp mirin
- 1 tbsp vegetable oil
- 10 oz udon noodles, fresh or frozen
- 2 stalks green onions, sliced
- ¼ sheet nori, shredded
- ½ tsp sesame seeds
- ¼ oz bonito flakes

Slice beef thinly against the grain. Combine soy sauce and mirin in a bowl.

Heat oil in a skillet over medium-high heat. Sear beef until browned, about 1-2 minutes per side. Toss with soy-mirin mixture and set aside.

Heat beef stock in a pot over medium heat. Add dashi powder, soy sauce, mirin, and sake. Stir until combined.

Simmer broth for 5 minutes to let flavors meld.

Cook udon noodles according to package directions. Drain and divide between two bowls.

Ladle hot broth over noodles. Top with sliced beef and its juices.
