Ingredients
- 1 lb beef tenderloin
- 4 cups lettuce
- 4 radishes
- 1 cucumber
- ¼ cup parsley
- 3 tbsp olive oil
- 1 lemon
- 1 tsp salt

Pat the 1 lb beef tenderloin dry and season all over with 1 tsp salt.

Heat 1 tbsp olive oil in a skillet over high heat. Add the beef and sear until browned on all sides, about 2 minutes per side for medium-rare.

Remove the beef from the skillet and let it rest for 5 minutes.

While the beef rests, slice the 4 radishes and 1 cucumber into thin rounds.

In a large bowl, combine the 4 cups lettuce, sliced radishes, cucumber, and 1/4 cup parsley.

Whisk together the remaining 2 tbsp olive oil and the juice of 1 lemon. Pour over the salad and toss to coat.
