- 3 tbsp soy sauce
- 2 tbsp white vinegar
- 6 cloves garlic, minced, divided
- 1.5 cups cooked white rice
- 2 whole eggs
- ½ cup atchara (pickled papaya)
Instructions
- 1
Toss beef with soy sauce, vinegar, and 3 cloves minced garlic in a bowl. Let sit 5 minutes while you prep everything else.
- 2
Heat 2 tbsp oil in a large skillet over medium-high. Add rice and remaining minced garlic; stir constantly until rice is golden and fragrant, about 4 minutes.
- 3
Push rice to the side. Increase heat to high and sear beef in batches without stirring until edges caramelize, about 90 seconds per side.
- 4
Transfer rice and beef to a serving plate. Add 1 tbsp oil to skillet and fry eggs sunny-side up until whites set but yolks still jiggle.
- 5
Top each plate with a fried egg and a generous spoonful of atchara on the side. Serve immediately.
